I don’t know about you all but I’ve been really loving nice cold sandwiches on these hotter days that we’ve been having! They’re just so refreshing and tasty. One of my all time favorite sandwiches is a Chicken Salad Sandwich. I remember only really eating them at baby showers when I was younger and they were so good. And tiny.. Why do baby showers serve such tiny food? Is it a representation of tiny babies? Any ways, not the point. Then about a year ago I bought a Chicken Salad Sandwich at a local grocery store and it was terrible! It was basically only chicken and mayonnaise. That was too plain for me, even for the plain eater that I am! I finally decided to make my own chicken salad that is so delicious I want to eat it everyday! It’s also super easy to make.
So the ingredients you will need are:
- 16oz shredded chicken (I used canned white chicken breast chunks)
- 1oz chopped celery
- 3oz chopped cucumber
- 2oz sliced black olives
- 1 1/2 cup mayonnaise
- 1tbs Dijon mustard
- 1tsp parsley flakes
- salt and pepper to taste
- Lime juice squeezed from 1 lime wedge
After all your ingredients are all chopped up and ready to go, mix them all together! The amount of mayonnaise you add depends on how creamy you want your chicken salad to be so you can start off with one cup to begin with. I ended up putting in about 1 1/2 cups.
My boyfriend doesn’t like black olives because he’s crazy so I had to put them on the side.
European croissants taste amazing with this chicken salad!
I also added lettuce, sliced tomatoes, and sliced avocado in my sandwich because I add those to any type of sandwich I eat. It’s delicious!
So there ya have it! A super quick and easy Chicken Salad Sandwich! You will love this and so will everyone else that you feed it to. Unless they don’t like black olives, haha!
