Hey everyone!
One of my favorite foods to eat is Chicken Fried Rice. It’s so yummy and has vegetables, it’s salty, and it can be a side dish or a main dish. What is there not to love? Yes, I know it’s easy and affordable to order Chicken Fried Rice from your local takeout restaurant, but I prefer to prepare my meals at home. Plus, I can add anything I want and how much I want to it. Here is my version that is easy, tasty and everyone is sure to love it!
Ingredients:
- 2 cups uncooked brown or white rice (I used brown)
- 2 cups water
- 10 oz. frozen vegetables (I used a mix of corn, peas, carrots and carrots)
- 1 medium sized boneless chicken breast
- 4 tbsp. soy sauce
- 2 large eggs
- 2 tsp. onion powder
- vegetable oil
- 2 tsp. seasoned salt
- 1/2 tsp. garlic powder
- salt and pepper to taste
The first step is to steam your rice. This step should be done in advance so the rice has time to cool down. If you don’t do this in advance, I’d suggest putting the cooked rice into a bowl and leave it out for a few minutes, then throwing it into the refrigerator. You can steam the rice either on the stove or in a rice cooker like I did. You can just follow the cooking instructions on the box or bag of the rice. When I use the rice cooker, I put equal amounts of uncooked rice to water. Rice cookers are amazing and make rice so perfect!
Cooking the chicken:
Brine the chicken (This step is optional for this recipe. You can read directions on brining chicken in my ‘Easy Baked Chicken Breasts’ post). Cut the boneless chicken breast into little chunks. Coat a pan with vegetable oil (or any oil of your choice) and heat on medium heat. Mix in the seasoned salt with the chicken and cook until golden brown.
Throw the frozen vegetables in the microwave to defrost them. While the vegetables are defrosting, warm up a large saucepan with vegetable oil over medium heat and then add in the rice and soy sauce. Keep in mind that I love soy sauce so I may have added more than most people might like. You can start off with 2 tablespoons of soy sauce to be on the safe side. Four tablespoons might be too much for your liking so you can add in more if you’d like to. Mix in the onion powder and garlic powder.
Push the rice all to one side of the pan and crack the eggs on the clear part. Scramble the eggs by themselves and smash them into little pieces. Once the eggs are fully cooked, mix the eggs in with the rice and add in the vegetables.
Add salt and pepper if needed then throw in the chicken.
The last step is to serve and enjoy!
